The food we eat and they way it’s prepared, is a celebration of our cultural identity. Roll The Bones Barbecue was conceptualized through the predilections of the Mediterranean, the conventions of the American South and the pride of New England. Its an ever evolving passion, that began in the kitchens and backyards of Lexington Massachusetts. Frequent trips to regional farm stands fostered a discovery of new foods, inspiring an abnormal infatuation for culinary experimentation. We're still here, to this day, sharing our craft with the entire Boston area.
Roasting and slow cooking have always been staple preparations for our meals. Eventually, this gave way to an affinity for the flame. Barbecue is an elemental process that allows us to appreciate and interact with our food’s transformation, through patience and attention. This delicate balance of temperature and time promotes a unique environment, where smoke binds with natural sugars,
forming that undeniable flavor we've grown to love.
